Picked in two passes for optimal ripeness. A combination of both whole bunch pressing and destemming/crushing before pressing. The juice is pressed to stainless steel tanks for settling prior to fermentation. Each parcel kept separate to allow for different ferment conditions, expression and blending options. Once the long fermentation has finished the wines are matured on their lees to build additional texture before blending and bottling.
