This rosé is hand-picked and is a blend of Cinsault, Grenache, Counoise and a splash of Vermentino. Hand-picked to really preserve freshness and allow us to control skin contact and extraction exactly how we want. All varieties were first crushed and then pressed together to integrate as early as possible. The pressed juice then went to a single 2500L concrete vessel for fermentation. The concrete vessel allows for some oxygen to permeate during ferment and helps express the wines minerality.
