2017 Highbury Fields Chardonnay

Bright straw with green hues. Aromas of melon, white flowers and stonefuit. Generous palate with flavours of stonefruit and some lemon pith. Textured with elegant natural acidity on the finish.

Harvested in the cool hours of the night and morning. Crushed and pressed straight to French oak barrels and some small stainless steel tanks. Long fermentation with wild yeast for barrel component & cultured for the tank component at cool temperatures. Some minor stirring of the wine on lees begins post primary fermentation with partial malo-lactic fermentation before being racked of yeast lees, and filtered before bottling in December.
Highbury Fields Block 5 and 6. Gin Gin dominant but includes small parcels of the Burgundian Clones 76, 95 and 96. ~240m altitude.

Forest Hill, Mount Barker in the Great Southern. Gravel, loams over clay.
Dry Grown, Minimal inputs. Row orientation is North-South

pH: 3.32, TA: 7.10 g/L, Alcohol: 13%
The 2017 growing season in Mount Barker was long and cool, beginning very wet and late. More than 800mm rainfall fell over 2016, well above the yearly average. This initial wet period was broken by a dry period in early Summer, however with moderate temperatures. Good fruit set for most varieties although veraison was late. Periods of light rain in February and March were refreshing especially with the cool temperatures, leading to bright natural acidity.
