The fruit was picked then de-stemmed/crushed into a single open fermenter for a period of cold soaking. Once the ferment began it was gently pumped over
with aeration up to twice a day; and temperature kept warm. Once ferment was complete, the wine was then pressed to French barriques for its Malo-lactic fermentation, allowing soft integration of the grape and oak tannins. Fined with natural egg whites and bottled after 14 months maturation.

The 2016 growing season in Mount Barker began with a dry spring and early summer, only 44mm falling between September and December. This initial dry period was broken by some significant rainfall during late summer. The harvest period saw moderate and even temperatures with some rainfall throughout these months, however our dry grown vineyards maintained canopy balance and very little disease pressure. The Malbec was very low yielding with good airflow through the canopy, and was one of the better red varieties in 2016.
