Dark crimson with plum hues. Aromas of blackcurrant, dark chocolate and floral notes. The palate is medium bodied with dark berry fruit sweetness and fine tannin structure.

The fruit was picked then de-stemmed/crushed into 8-tonne open fermenters and inoculated. The fermenters were pumped over with aeration twice a day; temperature was held around 25°C. The wine was then pressed to barrel for its Malo-lactic fermentation, allowing a soft integration of the grape and oak tannins. The wine was blended fined with egg whites and bottled after 15 months maturation.

TECHNICAL
pH: 3.58, TA: 6.4 g/L, Alcohol: 14%

BLEND
Cabernet Sauvignon ~50%
Merlot ~40%
Malbec ~10%

Fruit set for 2015 was very low and this coupled with lower than average rainfall during the winter and spring months lead to very low yields across all varieties in our dry-grown vineyard. These conditions resulted in grapes with concentrated flavours and intensity.
