The top rows of Block 8 were hand harvested over two days. The whole bunch grapes were chilled overnight before hand sorting and pressing. The small amount of free run was pressed to new and second fill French Oak barriques for fermentation with wild yeast. Fermentation was held at cool temperatures to retain as much of the natural freshness as possible. Once alcoholic fermentation was completed, the barrels were lees stirred weekly to build texture with only partial natural malolactic fermentation. After 10 months in barrel, the wine was blended, bottled and bottle aged before release.

GROWING AREA & SOILS
Forest Hill, Mount Barker in the Great Southern. Gravel, loams over clay, with loams being darker at the top of Block 8 with lighter, almost white clays beneath.

FARMING
Dry Grown, Minimal inputs. Row orientation is North-South.

HARVEST
5th and 6th March 2015

TECHNICAL
pH: 3.23, TA: 7.52 g/L, Alcohol: 13.5%

Fruit set for 2015 was very low and this coupled with lower than average rainfall during the winter and spring months lead to very low yields across all varieties in our dry-grown vineyard. These conditions resulted in grapes with concentrated flavours and intensity.
